BBQ Chicken with Roasted Brussels Sprouts and Radishes

Ingredients

  • 3 Tbsp oil of your choice (recommended avocado or extra virgin olive oil)
  • ½ lb radishes, cut in half
  • ½ lb brussels sprouts, cut in half or quarters (depending on size)
  • 1 lb chicken breast or drumsticks (butterflied)
  • herb leaves of your choice
  • 4 Tbsp Get Saucy Barbeque Sauce
  • Balsamic Vinegar (optional)

Instructions

  1. Heat 2 Tbsp oil in sauté pan and place radishes and brussels sprouts cut-side down, cooking until golden brown (around 3-4 minutes), set aside in bowl.
  2. Heat 1 Tbsp oil in sauté pan on medium-high heat and add chicken tossed in herbs, cooking ~ 2-3 minutes per side for the breast and 4-5 minutes for the butterflied drumsticks.  
  3. Once fully cooked, lower the heat and baste Get Saucy Barbeque Sauce onto the chicken. (Optional step: place into oven on broil or 400⁰F (204⁰C) until desired brownness.
  4. Toss pan-roasted vegetables with balsamic vinegar and extra virgin olive oil if desired and serve alongside the BBQ chicken with pickles.
