Chicken Tikka Masala with Basmati Rice

Prep Time: 35 minutes (30 minutes inactive) for Basmati Rice

Cook Time: 15 minutes for Chicken Tikka Masala, 20 minutes for rice

Ingredients

  • Water for rinsing/soaking rice
  • 1 cup basmati rice
  • 1.25 cups water for cooking rice
  • 1 Tbsp oil of your choice for the rice (optional)
  • 1 teaspoon salt (optional)
  • 1 bay leaf (optional)
  • 1 lb chicken or choice of protein
  • 1 Tbsp oil of your choice to cook chicken (recommended avocado or coconut)
  • 1 cup Get Saucy Tikka Masala
  • Coriander to garnish 

Instructions 

  1. Rinse basmati rice until the water runs clear. Then soak in enough water to cover for at least 30 minutes.
  2. Heat *salted and oiled* water in pot for the rice. Once boiling, add bay leaf, rice, stir, bring to boil, add lid and lower heat to low and cook for 15 minutes.
  3. Cut chicken into 1-2 inch cubes/chunks (can be put into sauce to marinade for at least 10 minutes).
  4. Add oil to sauté pan or pot on medium-high heat, heat until shimmering.
  5. Add protein to sauté and cook about 2-3 minutes per side.
  6. Add Get Saucy Tikka Masala and stir, lower heat to medium-low and cook ~ 10 minutes or until chicken is cooked through.
