Chicken Tikka Masala with Basmati Rice

Ingredients
- Water for rinsing/soaking rice
- 1 cup basmati rice
- 1.25 cups water for cooking rice
- 1 Tbsp oil of your choice for the rice (optional)
- 1 teaspoon salt (optional)
- 1 bay leaf (optional)
- 1 lb chicken or choice of protein
- 1 Tbsp oil of your choice to cook chicken (recommended avocado or coconut)
- 1 cup Get Saucy Tikka Masala
- Coriander to garnish
Instructions
- Rinse basmati rice until the water runs clear. Then soak in enough water to cover for at least 30 minutes.
- Heat *salted and oiled* water in pot for the rice. Once boiling, add bay leaf, rice, stir, bring to boil, add lid and lower heat to low and cook for 15 minutes.
- Cut chicken into 1-2 inch cubes/chunks (can be put into sauce to marinade for at least 10 minutes).
- Add oil to sauté pan or pot on medium-high heat, heat until shimmering.
- Add protein to sauté and cook about 2-3 minutes per side.
- Add Get Saucy Tikka Masala and stir, lower heat to medium-low and cook ~ 10 minutes or until chicken is cooked through.
