Thai Yellow Curry with Cod and Bok Choy

Ingredients
- 2 Tbsp oil (avocado or coconut)
- 100 grams washed Bok Choy, sliced across the rib, leaves intact
- 300 grams Cod, cut into 2” cubes
- 1 cup Get Saucy Yellow Thai Curry
- Coriander to garnish
- Cauliflower Rice (optional)
Instructions
- Heat oil on medium-high heat in sauté pan or pot until shimmering.
- Add bok choy and sauté 1-2 minutes.
- Remove or move bok choy aside and place cod into pan/pot, cook for 2 minutes.
- Add Get Saucy Yellow Thai Curry, bring to bubble, then lower heat to medium-low.
- Cook additional 3-4 minutes, until fish is cooked through.
- Garnish with coriander and you’re done!
