Thai Yellow Curry with Cod and Bok Choy

Ingredients

  • 2 Tbsp oil (avocado or coconut)
  • 100 grams washed Bok Choy, sliced across the rib, leaves intact
  • 300 grams Cod, cut into 2” cubes
  • 1 cup Get Saucy Yellow Thai Curry
  • Coriander to garnish
  • Cauliflower Rice (optional)

Instructions

  1. Heat oil on medium-high heat in sauté pan or pot until shimmering.
  2. Add bok choy and sauté 1-2 minutes.
  3. Remove or move bok choy aside and place cod into pan/pot, cook for 2 minutes.
  4. Add Get Saucy Yellow Thai Curry, bring to bubble, then lower heat to medium-low.
  5. Cook additional 3-4 minutes, until fish is cooked through.
  6. Garnish with coriander and you’re done!
