Veggie Fajitas
Ingredients
- 1 zucchini, seeded
- 1 summer squash, seeded
- 4 shiitake caps
- ½ red onion
- 1 Tbsp Get Saucy™ Taco Seasoning
- 1 Tbsp avocado oil
Instructions
- Slice zucchini, summer squash, shiitake caps, and red onion into ½-inch slices.
- Place the vegetables in a mixing bowl and season with Get Saucy™ Taco Seasoning.
- Heat avocado oil in a pan over medium heat.
- Add the seasoned vegetables and cook until tender and lightly caramelized (about 5–6 minutes).
- Serve hot atop the prepared pan-fried/grilled tortilla.

Tortillas
Ingredients
- 1 grain-free tortilla
- 2 Tbsp avocado oil
Instructions
- Heat avocado oil in a small skillet over medium heat.
- Place tortilla in the skillet and fry until golden brown and slightly crisp on both sides (about 1–2 minutes per side).
- Transfer to a paper towel to remove excess oil and keep warm until ready to serve.

Garnish With
- ¼ cup coconut yogurt
- ¼ cup micro cilantro
- 2 Tbsp chopped white onion (½-inch cubes)

Serving Suggestion
Layer the fried tortilla with sautéed vegetables and top with a spoonful of coconut yogurt, a sprinkle of white onion, and micro cilantro.
Add a drizzle of Get Saucy™ Taco Crema (see recipe) or a squeeze of lime for extra zest.
