Grilled Grain-Free Tortillas

Ingredients

  • 3 grain-free tortillas

Instructions

 

  1. Heat a griddle pan over medium-high heat.
  2. Place tortillas onto the griddle at a 45° angle.
  3. Cook for 30 seconds to 1 minute, or until light grill marks form.
  4. Remove from heat and keep warm until ready to serve.

Grilled Zucchini and Summer Squash

Ingredients

  • ½ zucchini, sliced ¼ inch thick lengthwise
  • ½ summer squash, sliced ¼ inch thick lengthwise
  • 1 tsp avocado oil

Instructions

  1. Preheat a griddle pan over medium-high heat.
  2. Lightly coat the zucchini and summer squash slices with avocado oil.
  3. Place the slices onto the hot griddle at a 45° angle.
  4. Grill for 1–2 minutes per side, until tender with grill marks.
  5. Remove from heat, let cool slightly, and dice into ¼-inch cubes for the vegetable filling.

Vegetable Filling

Ingredients

  • ¼ cup avocado, diced ¼ inch
  • ¼ cup grilled zucchini, diced ¼ inch thick
  • ¼ cup grilled summer squash, diced ¼ inch thick
  • ¼ cup radish, diced ⅛ inch thick
  • 2 tsp Get Saucy™ Taco Seasoning

Instructions

  1. In a medium bowl, combine avocado, grilled zucchini, grilled summer squash, and radish.
  2. Sprinkle with Get Saucy™ Taco Seasoning and toss gently to coat evenly.
  3. Taste and adjust seasoning as desired.
  4. Portion the filling onto the prepared grilled tortillas.

Garnish Ideas

  • ½ cup red onion, sliced ⅛ inch thick
  • A pinch of micro cilantro leaves

Serving Suggestion

Top each tortilla with the vegetable filling, garnish with red onion and micro cilantro, and finish with a drizzle of Get Saucy™ Taco Crema (see recipe) or Salsa Verde for an extra burst of flavor.
