Grilled Grain-Free Tortillas
Ingredients
- 3 grain-free tortillas
Instructions
- Heat a griddle pan over medium-high heat.
- Place tortillas onto the griddle at a 45° angle.
- Cook for 30 seconds to 1 minute, or until light grill marks form.
- Remove from heat and keep warm until ready to serve.

Grilled Zucchini and Summer Squash
Ingredients
- ½ zucchini, sliced ¼ inch thick lengthwise
- ½ summer squash, sliced ¼ inch thick lengthwise
- 1 tsp avocado oil
Instructions
- Preheat a griddle pan over medium-high heat.
- Lightly coat the zucchini and summer squash slices with avocado oil.
- Place the slices onto the hot griddle at a 45° angle.
- Grill for 1–2 minutes per side, until tender with grill marks.
- Remove from heat, let cool slightly, and dice into ¼-inch cubes for the vegetable filling.

Vegetable Filling
Ingredients
- ¼ cup avocado, diced ¼ inch
- ¼ cup grilled zucchini, diced ¼ inch thick
- ¼ cup grilled summer squash, diced ¼ inch thick
- ¼ cup radish, diced ⅛ inch thick

Instructions
- In a medium bowl, combine avocado, grilled zucchini, grilled summer squash, and radish.
- Sprinkle with Get Saucy™ Taco Seasoning and toss gently to coat evenly.
- Taste and adjust seasoning as desired.
- Portion the filling onto the prepared grilled tortillas.
