Ingredients
- 1 teaspoon turmeric
- 2 teaspoons mint, chopped
- 2 teaspoons cilantro, chopped
- 2 teaspoons parsley, chopped
- 1 Tablespoon extra virgin olive oil
- 1 jar Get Saucy™ Marinada™ (Tomato-Free Marinara)
- 4 cups spinach
- 4 halibut filets, 4 to 6 ounce servings
- Sea salt, to taste
- Black pepper, to taste
- Cauliflower rice or brown rice if tolerated
Instructions
1. Chop the mint, cilantro, and parsley. Place in a separate small bowl and set aside.
2. Heat a large, deep skillet over medium heat. Add in the olive oil and add in half of the turmeric, reserving the rest for later, and allow the spice to bloom until fragrant, about two minutes.
3. Add the Marinada sauce to the skillet and increase heat to medium high until it reaches a simmer. Reduce the heat to medium low, cover, and cook the Marinada for about ten minutes.
4. Add the spinach to the sauce and allow it to wilt slightly, about one to two minutes.
5. While the sauce is simmering, season the halibut fillets with salt and pepper, then sprinkle the remaining turmeric evenly over the tops to lightly coat the fish.
6. Place the seasoned fish fillets into the Marinada sauce. Cook over medium high heat for two to three minutes, then reduce the heat to medium. Cover and cook for another ten to fifteen minutes, until the fish is cooked through and flakes easily with a fork.
7. Remove the pan from the heat and serve immediately. Spoon the Marinada over a bed of rice, place a halibut fillet on top, and finish with a generous sprinkle of the fresh herb blend (mint, cilantro, and parsley).
